Spring has finally arrived and April is the best time to experience the pleasure of harvesting your own fresh bamboo shoots, especially in the Atami area.

Although, a little technique is required to dig up the shoots as they are deep rooted, it is well worth the effort as they are delicious and can be used in a variety of ways in the kitchen.
